Ingredients
Vegetable oil 5 tablespoon
Shallot 20 g
Red Chili 2 stalk
Prawn 150 g
Rice Vermicelli 1 packet
Bean Sprout 150 g
Seasonings
Soy Sauce 6 tablespoon
Oyster Sauce 1 tablespoon
Pepper ½ teaspoon
Water ½ cup
Lime 2

Method
1. Cut chili into slices. Remove shallot out layer and cut it into slices.
2. Remove prawn shell and prawn dirt. Wash it clean.
3. Soak rice vermicelli in a bowl of water to soften it.
4. Heat up oil and sauté chopped shallot until fragrant.
5. Add in shallot, chili followed by prawn. Stir-fry until aromatic.
6. Add in bean sprout. Stir-fry.
7. Add in rice vermicelli. Stir-fry.
8. Add in ½ cup of water. Stir-fry till dry.
9. Add in soy sauce followed by oyster sauce. Stir-fry it.
10. Add in pepper. Stir-fry.
11. Cover the wok a while for about 10minutes till it fragrant.
12. Put on a dish. Squeeze lime on it. Ready to serve!

Egg yolk 4
Sugar 80 g

Margarines 80 g
Milk 80 g
Ingredient (B)
Flour 160 g
Baking Powder 5 g
Mocha Powder 3 g
Flour 160 g
Ingredient (C)
Egg white 4
Tartar Powder 0.5 g
Sugar 100 g
Decoration Ingredients
Whipped cream
Paper 1
Icing Sugar

Methods
Step 1: Mixture A: Mix all ingredient (A) until the sugar and salt completely dissolve with the egg yolks. Put in ingredient (B) until the mixture blends thoroughly.
Step 2: Mixture B: Put the egg white into a dry bowl followed by 1/3 portion of sugar. Whisk it using an electronic mixer. Put another 1/3 portion of the sugar and whisk the mixture. Put the last 1/3 portion of sugar and whisk the mixture until it turns creamy white.
Step 3: Mixture C: Put 1/3 portion of Mixture B into Mixture A. Blend well and put the mixture into the rest of Mixture B. Blend well.
Step 4: Pour Mixture C into a baking tin. Bake at 180 °C for 25 minutes. Leave to cool.
Step 5: Divide the cake into 2 layers. Spread the whipped cream on top of one layer and cover it with the other layer.
Step 6: Roll the paper into cone shape. Fill it with the whipped cream and squeeze it on top of the cake to produce flowery decoration. Sprinkle icing sugar on top of the cake evenly. Serve


Hainanese Chicken Rice

Hainanese Chicken Rice is a popular dish in Asia. It is delicious and easy to make. Here goes the recipe.

Chicken broth ingredients
Chicken 1
Ginger 300 g
Cabbage ½
Salt ½ teaspoon
Coriander Leave 3 stalk
Chicken rice ingredients
Rice 4-5 servings
Ginger 200 g
Chili Sauce Ingredients
Chili 200g
Garlic 100 g
Lime 1

Methods of Chicken Broth
1.Cut chicken into halves and remove its intestines. (This can re done by the hawker). Marinate chicken with a teaspoon of salt.
2.Wash cabbage and cut it.
3.Heat a pan of water with ginger until boil.
4.Add in chicken. Water must be enough to cover chicken.
5.Heat until chicken is cooked.
6.Add in cabbage and coriander leaves. Heat until aromatic.

Methods of Chicken Rice
1.Take half of the chicken broth to for cooking rice.
2.Cook rice with chicken broth and ginger.

Methods of Chili Sauce

1.Remove inedible portion of chili and garlic. Put it into a chopper to grind it.
2.Put grind mixture into a bowl. Squeeze out lime on it.


Stir Fry – Mushroom with Sea Cucumber

Ingredients
Sea Cucumber 150 g
Fresh Mushroom 15 g
Ginger 10 g
Chive 10 g
Seasonings
Vegetable oil 2 tablespoon
Salt 5 g
Oyster Sauce ½ tablespoon
Soy sauce 1 tablespoon
Wine ½ tablespoon

Methods
1. Soak sea cucumber in water for 15 minutes. Wash it clean.
2. Shred off the skin of ginger.
3. Cut sea cucumber, mushroom, ginger and chives into slices.
4. Heat wok with oil. Put in ginger, sea cucumber, wine and mushroom one after another in interval of 2 minutes. Stir fry the dish.
5. Put in 2 tablespoon of water. Cover the wok for 5 minutes.
6. Add in chives, salt, oyster sauce and soy sauce one after another in interval of 2 minutes. Stir fry the dish.
7. Cover the wok for 5 minutes. Once you can smell the food aroma, you can turn off the heat and put the food on a dish. Ready to serve.
