Pumpkin Soup

Ingredients
Pumpkin 1 (about 700g)
Chicken broth 1 cups
Water 3 cups
Leeks 2
Butter 50 g
Cheese 20 g
Salt ¼ teaspoon
Chive little

Methods
1. Cut the pumpkin into big pieces. Peal and de-seed pumpkin.
2. Cut de-peel pumpkin into smaller sizes.
3. Put cut pumpkin, chicken broth and water into the saucepan and bring to boil.
4. Simmer in low heat for 30 minutes. Stir occasionally.
5. Add in butter, cheese, leek and salt. Stir gently until butter and cheese blend into pumpkin.
6. Put soup in bowls. Sprinkle with sliced chive. Ready to serve.

Easy Banana Chocolate Chip Muffins

Ingredients
Banana 1 large ripe
Milk 1 cup
Egg 1
Melted margarine ¼ cup
Flour 1 ½ cup
Baking powder 1 ½ teaspoon
Caster sugar ½ cup
Choc chips ¾ cup

Methods
1. In a mixing bowl, mash the banana, add the milk, egg, and melted margarine. Mix well.
2. Stir in the sifted flour, baking powder, sugar and choc bits into step (1) mixture. Mix well.
3. Spoon mixture into greased muffin tin.
4. Bake at 190 degree for 20 minutes. Leave to cool.
