This recipe can serve 3- 4 persons
4 green bananas, peeled and halved
450g white yam, peeled and cut into pieces
1 thyme sprig
40g creamed coconut milk
salt and ground black pepper
chopped fresh thyme and thyme
sprigs, to garnish
1.Bring 900 ml cups of water to the boil in a large saucepan.
2.Lower the heat and add green bananas and yam.
3.Simmer gently for about 10 minutes.
4.Add the thyme and coconut, with salt and pepper to taste.
5.Bring to boil until yam and banana are tender.
6.Transfer the yam and banana to the plate.
7.Continue cooking the coconut milk until thick and creamy.
8. Add in the yam and banana. Spoon into the serving dish and sprinkle with chopped thyme.

Make 12
140g butter, softened
¾ cup sugar
3 eggs
½ tsp vanilla essence
200g plain flour
¼ tsp salt
2 tsp baking powder
1.Pre-heat oven to 180 degree celsius.
2.Line 12 muffin tin with paper liner
Mixture A
3.Sift flour, salt and baking powder together into a bowl
Mixture B
4.In a bowl, mix butter and sugar until light and puffy.
5.Add the eggs into step 4, one at a time, continue mixing.
6.Add the vanilla essence.
Mixture C
7.Stir in mixture A into B until no flour remains.
8.Scoop mixture C into the paper liner, each ¾ full.
9.Bake for 20 minutes, then remove from oven and leave to cool.
