Making Thai Yellow Rice is not difficult. It just need slight more effort than preparing the normal white rice. However, the extra effort is really worth the while.

| White rice |
350 g |
| Water |
310 ml |
| Coconut cream |

½ teaspoon |

This is the recipe for Thai Yellow Rice.
Method
1.Soak rice in large bowl of cold water for 30 minutes.
2.Drain away the water. Rinse rice with water to clean it.
3.Place rice and the rest of the ingredients into a large saucepan. Bring to boil. Stir occasionally.
4.Reduce heat. Cover and simmer until rice is tender.
5.Remove from heat. Cover it for 5 minutes. Serve.

Method
1.Cut fish into small pieces.
2.Blend fish with curry paste, lime leaves, onion, sauce, chilli and juice until it form a smooth paste.
3.Divide paste into portions. Roll into fish balls and flatten into fish cakes.
4.Heat wok with oil. Fried fish cake till golden brown. Serve.

| Konbu (kelp seaweed) |
1 postcard size |
| Water |
1 litre |
| Bonito Flakes |
20 g |
Method
1.Put the water in a bowl. Soak the konbu in the water for an hour.
2.Pour it in the saucepan and heat the ingredients at moderate heat.
3.Remove konbu when it floats.
4.Add in bonito flakes. Increase the heat but not till boiling.
5.Turn off the heat and let the bonito flakes to settle at the bottom.
6.Drain away bonito flakes and leave bonito stock in a bowl.

Here is the recipe for Vegetarian dashi - Japanese Vegetable stock.

| Shiitake Mushrooms (dried) |

Method
1.Soak shiitake mushrooms and konbu in water for an hour. Remove and put it in a bowl.
2.Heat saucepan with a litre of water till hot but not boiling.
3.Add in shiitake mushrooms and konbu. Remove konbu after it float.
4.Increase heat till water boiling and continue simmering for another 2 minutes.
5.Turn off heat and leave stock to cool. Remove shiitake mushrooms.
