Raisin Cake

What are Raisins? They are actually dried grapes. Raisins can be eaten raw. They can be used for cooking and baking as well.

This is a free recipe for creating yummy raisin cakes. It is not difficult to do.

Ingredients A
Flour (sifted) 240g
Baking powder (sifted) 1 flat tsp
Ingredients B
Castor sugar 160 g
Butter 180 g
Ingredients C
Eggs 3
Vanilla essence 1 tsp
Raisin 100 g
Milk 150 ml

Mixture C
a) Beat eggs. Mix it with milk and vanilla essence. Continue beating the mixture until it blends well.

Raisins Method
1.Mix ingredients A with ingredients B till it blends well.
2.Add in mixture C.
3.Mix the mixtures well using the electric mixer or stir it using a wooden spoon until it blends well.
4.Add in raisin. Continue mixing it.
5. Pour the mixtures into 19cm by 19cm baking tin.
6.Bake in oven at 180 degree for about 40 minutes or until baked.
7.Leave to cool.


Easy Baking Chicken Pie!

Pastry  
Plain Flour 250 g
Butter 200 g
Plain Yogurt 100 gm
Egg Yolk 1
A pinch of salt  
   

Pastry Method
1.Put flour, salt and butter into the mixing bowl. Mix well.
2.Add in egg yolk. Continue mixing.
3.Add in yogurt, continue mixing until it forms a soft dough. Refrigerate for 25 minutes.

Fillings  
Potatoes (skin remove and dice) 2
Carrot (skin remove and diced) ½
Chicken breast (dice) 2
Fresh mushroom (wash and slice) 4
Onion (slice) 1
Salt 1 flat tsp
pepper (powdery form) ½ tsp

Fillings Method
1.Heat up 2 tablespoons of vegetable oil. Add in onion. Stir fry till fragrant.
2.Add in dice chicken breast, fresh mushrooms, dice potatoes and carrot. Continue to stir fry.
3.Add in salt, a teaspoon of light soy sauce and pepper. Stir fry till aromatic.
4.Add in ¼ cup of water. Simmer till ingredients are soften and slightly dry. Turn heat off and leave fillings to cool.

Chicken Pie Method
1.Cut the dough into smaller ones and roll it into balls.
2.Put a a dough ball in the mold, spread it evenly to form the pie base layer.
3.Add in fillings. Flatten a portion of the dough to to form the pie top layer. Knead pie top layer and the base layer together.
4.Preheat the oven to 180 degree and bake the pies for 30 minutes till golden brown in colour. Serve while warm.


White Fungus with Lotus Seed Dessert

White Fungus is a plant that is commonly featured in Chinese dishes. You can get it from Chinese grocery store or medical shops. Same should goes with Lotus seed as well.

For this free recipe for White Fungus with Lotus Seed Dessert, you will need the following ingredients.

Ingredients
White Fungus 38g
Fresh Lotus Seeds 150 g
Red Dates 12
Dried Lily Bulb 19 g
Rock sugar 150 g
Water 8 cups

1.Soak white fungus in water until tender.
2.Trim and cut it into small pieces.
3.Wash and cook it in boiling water for 3 minutes. Remove from water, rinse and set aside.

Methods
1.Soak dried lily in water for an hour. Drain.
2.Wash and drain fresh lotus seeds and red dates.
3.Bring 8 cups of water to boil. Add in red dates, dried lily and white fungus. Boil ingredients until tender.
4.Add in fresh lotus seeds. Bring to boil again.
5.Add in rock sugar. Continue to boil till sugar dissolve completely. Serve.
