Ingredients:

For filling:

1. 3 pieces of riped banana

2. 1/4 tin of creamy sweet corn

Others:

3 pieces of pandan leaf60 grams of sugar

20 ml of water.

90 ml of thick coconut milk

50 ml of coconut flower wine

45 gram of rice

25 grams of plain flour

10 grams of corn flour

1 and 1/2 teaspoon of baking powder

10 ml of coconut water

75 grams of fine grated coconut

2 eggs

1/2 teaspoon of bicarbonate of soda

Method and instructions:

1. Put the 3 pieces of pandan leaves into the 20 ml of water. Blend and strain into juice.

2. Cut the banana into smaller slices.

3. Next mix sugar into the pandan juice. Stir until the sugar dissolves.

4. Except for the grated coconut and 2 eggs, add all the rest of the ingredients into the pandan juice

5. Now add the grated coconut and eggs into the mixture. Mix well and let it settle for about 10-15 minutes.

6. Now, turn the fire and heat up the pan. Pour a little bit of bit and 2 tablesppon of batter. Put some of the sliced bananas and sweet corn on top. Now cover with lid and cook it for about 1 minute.

7. Take out the pancake and fold into half.

The pancake is now ready for serving.
