Pastry Method
1.Put flour, salt and butter into the mixing bowl. Mix well.
2.Add in egg yolk. Continue mixing.
3.Add in yogurt, continue mixing until it forms a soft dough. Refrigerate for 25 minutes.

<p><strong>Fillings Method</strong><br />
1.Heat up 2 tablespoons of vegetable oil. Add in onion. Stir fry till fragrant.<br />
2.Add in dice chicken breast, fresh mushrooms, dice potatoes and carrot. Continue to stir fry.<br />
3.Add in salt, a teaspoon of light soy sauce and pepper. Stir fry till aromatic.<br />
4.Add in ¼ cup of water. Simmer till ingredients are soften and slightly dry. Turn heat off and leave fillings to cool.</p>
<p><strong>Chicken Pie Method</strong><br />
1.Cut the dough into smaller ones and roll it into balls.<br />
2.Put a a dough ball in the mold, spread it evenly to form the pie base layer.<br />
3.Add in fillings. Flatten a portion of the dough to to form the pie top layer. Knead pie top layer and the base layer together.<br />
4.Preheat the oven to 180 degree and bake the pies for 30 minutes till golden brown in colour. Serve while warm.</p>

<p><strong>Methods</strong><br />
<strong>For Pineapple Jam</strong><br />
Mix all ingredients. Cook under low heat until almost dry. Add in butter last. Leave to cool.</p>
<p><strong>For Pastry</strong></p>
<ol>
<li> Mix flour, caster sugar and butter well.</li>
<li>Add in egg yolks and egg white last.</li>
<li>Roll into dough.</li>
<li>Divide dough into small dough balls. Flatten the dough balls.</li>
<li>Shape it using pattern maker (optional)</li>
<li>Filled with pineapple jam.</li>
<li>Place it on a grease baking tin.</li>
<li>Bake it at 180 degree for 20 to 25 minutes until it turn golden.</li>

			<content:encoded><![CDATA[<p>Mooncakes are eaten during the Mid Autumn Festival Lunar day – 15 August. The moon at this day is also found to be the biggest, brightest and roundest comparing to other days. Mooncakes are sweet tasting and comes in a variety of fillings (paste) such as red bean paste, green tea paste, yam paste, durian paste, etc. It would be an enjoyment to eat mooncakes served with tea with your family members during these days. On the other hand, the kids will be engrossed with playing with lanterns with their friends and relatives.</p>

<p><strong>Making Snowskin</strong><br />
1.Put premix in a bowl<br />
2.Add in shortening. Use hand and mix the shortening with the snowskin premix until it blend thoroughly.(mixture A)<br />
3.Mix flavouring and essence into sugar syrup - (mixture B) Add  mixture B into mixture A. Use hand to blend ingredients thoroughly.<br />
4.Leave it for 15-20 minutes for the premix to set.</p>
<p><strong>Molding the mooncake</strong><br />
1. Divide snowskin dough and lotus seed paste into small portions. Usually a mooncake consists of 30 % snowskin dough and 70 % lotus seed paste depending on the mooncake mold (60g dough and 140g paste).  Divide snowkin dough and lotus seed paste into 60 g and 140 g respectively. Roll snowskin and lotus seed paste into round shapes.<br />
2. Flatten the one of the round shape snowskin, put in the lotus seed paste. Wrap lotus seed paste with the snowskin.<br />
3. Sprinkle some baked glutinous flour on the mooncake mold. Put (2) into the mooncake mold. Flatten and shape it into mooncake. Put the mooncakes on a tray sprinkled with baked glutinous flour.<br />
4.Continue with the rest portions of snowskin and lotus seed paste to make it into mooncakes.</p>

2.Prepare the baking tin with baking paper, grease the paper with some butter.<br />
<strong>Cookies mixtures preparation</strong><br />
3.Place the egg whites in a bowl, whisk it with an electric mixer until it is puffy and creamy.<br />
4.Add in sugar, cocoa powder, flour and coffee powder. Continue whisking the mixture until the ingredients are blended thoroughly.<br />
5.Add in 1 tablespoon of water, continue whisking the mixture until it is thick.<br />
6.Fold in the chopped walnut.<br />
7.Place tablespoons of mixture on the baking tin (leaving spaces in between for cookies&#8217; expansion), making about 18 pieces of cookies.<br />
8.Baked the cookies for 12 – 15 minutes until it is golden and slight crack can be seen. Remove from oven and leave it to cool. Store it in airtight container to keep its freshness.</p>
