This article is a free online recipe for preparing Leek Soup. Leek is related to garlics and onions. It is also known as Allium Porrum. The stem is the edible part of the leek.

The ingredients are:

10 - 12 pieces of leeks,1 lb. of potatoes,

1-1/2 pints of milk,

1 oz. of butter,

freshly squeezed lemon juice

some salt

some pepper

Recipe method and instruction:

1. Firstly we will need to prepare the leeks. We do that by removing the coarse part of the green ends of the leeks. After that, slice the leeks along its length. Brush out the grit. Soak in water and wash the leeks thoroughly. Once there is no more grit, cut the leeks in shorter pieces.

2. Next, we will need to prepare the potatoes. Peel and wash the potatoes and dice them into smaller pieces.
3. Next, put the leeks and potatoes into 1 quart of water. Put them over the fire. We will need to cook them until they become softened. This will take about 60 minutes or so.

4. When the vegetables have finally softened, grate them through a sieve. Put the resultant soup to the saucepan.

4. Now introduce the butter, seasoning and milk into the soup. Put them over the fire for boiling.

5. Lastly, add the lemon juice just before serving.

If the soup becomes to thick simply add some more hot water. Serve the soup together with Allinson plain rusks.

OK, that is all for this free online recipe about Leek soup. Happy soup making.
